Mt. Midoriyama Classic Edition

A different character from Mt. Midoriyama Total Victory, this is a fresh and citrusy affair that makes for a fun thirst-quencher that will refresh you, make you smile, and blow your mind all at the same time.

Notes of stone fruit, watermelon, and racy acidity will surprise you once this natty touches your tongue.

• Dolcetto was transported to the winery and immediately pressed hard and slow. 
• Naturally fermented, reaching a maximum temperature of 24 degrees in the cooler.
• Bottled with 16 grams of residual sugar per liter, then inverted and chilled.
• Disgorged, losing around 20% from each bottle and topping up with 20% Chardonnay.
• The Chardonnay was young and lean with 3 and a half months in oak, 25% 1 year old barrels and 75% 3 year old barrels — adding a layer of complexity. 
• Each bottle was then re-capped, cleaned, dried, labeled and boxed for your drinking pleasure.
