Square Root of Five

A superbly enjoyable light red with a freshness that makes it drinkable on its own, but also offers an interesting savory edge and structure that can make any meal way more fun.

With the fragrance of candied cherries and thyme, the palate of Square Root of Five is bright, with notable flavors of cherry and raspberry shortcake. The soft tannins make this the perfect bottle to chill out and slurp up.

A blend of Sangiovese grapes done two ways:

• King River Estate (King Valley Wine Region)
• Grapes are destemmed then cold soaked for 5 days at 2 degrees.
• Fermented fully over skins over 2 weeks
• Pressed, then transferred to old french barriques where wild malolactic fermentation occurs
• Aradale Vineyard (Grampians Wine Region)
• Soaked overnight post-harvest
• Pressed off into stainless steel, making a concentrated a punchy rose
• Fermented below 20 degrees over 3 weeks before being racked to separate lees.
• The Aradale Vineyard rose was blended to freshen and soften the tannins of the muscular King River Estate red.
• Small addition of sulphur.

The great outdoors, with pleasantly warm weather, and a good amount of chicken fingers.
