WHY WE LOVE THIS WINE 

We designed Bb. Sunshine specifically for Filipino cuisine, climate, and culture. A light skin-contact white wine, Bb. Sunshine is fruity with balanced acidity, so every sip refreshes the palate and offers a very interesting flavor profile.

TASTING NOTES 

Packed with fruity Filipino favorites like mango and pineapple, with some delicious texture and tannins from the skin fermentation of some the blended wines.

WINEMAKER NOTES 
30% Riesling, Merkel Vineyard, King Valley, Victoria.
Fruit showed ripe citrus fruit and hints of dried tropical fruits with HEAPS of natural acidity. Picked and pressed straight away, no skin time here, just wanted to retain freshness. Naturally fermented in stainless steel for 3 weeks. Once complete it was chilled, settled and racked and then transferred to old french oak.
 
25% Chardonnay, Eminence Vineyard, Whitlands, King Valley, Victoria.
Premium cool climate chardonnay, lemon and lime with white floral notes. Exactly the same treatment as the riesling to be honest, idea being to retain freshness and keep the fruit at the forefront. 95% aged in old french barrique, 5% aged in new French. 

30% Arneis, Cavicchiolo Vineyard, King Valley, Victoria
All apples and pears here. Picked and destemmed immediately and then fermented on skins for 3 weeks in 500L tubs outside in our vineyard right next to the vines to ensure we got a diverse wild yeast profile. Daily foot stomping and then basket pressed into tank for a settle and rack and then transferred to old french oak.

10% Sauvignon Blanc, Aradale Vineyard, Grampians, Victoria Super clean and bright Sauvignon Blanc to add aromatics and acidity. Picked and pressed straight away with no time on skins. Settled and racked prior to ferment which was kept below 20 degrees to retain aromatics. Cold settled and racked post ferment and transferred to stainless steel where it was sulphured to avoid MLF and left for 8 months on fine lees. Racked a further two times prior to blending. 
5% Picolit, Bendigo, Victoria picked and run through the destemmer to 500L tubs outside in the vineyard. 5 days on skins and then pressed off with our basket press and transferred to old oak for fermentation. Once through initial ferment the wine was then racked and transferred to old oak again but with ullage to encourage flor yeast. This was then aged for 12 months on ullage(similar to Jura) under flor which gives this wine an oxidative savoury aroma of almonds and quite a saline palate.
