This wine is like a ballerina — light-footed and elegant, yet delights with thoughtful complexity. Like a ballet, this wine will put you in a contemplative mood as it uncovers different layers of itself over time. Best enjoyed with a slight chill.

Cherries and dark berries, with a touch of smoke and subtle hint of spices.

• Grapes are hand-harvested then macerated for 3 days
• 100% of grapes go through semi carbonic fermentation with stems in amphora for 4 days
• 20% then goes through carbonic fermentation with stems for 4 days
• Spontaneous fermentation for 13-15 days
• Matures in wooden barrels for 8 months

A small midday or afternoon get-together with friends, in a room with lots of natural light, or in a breezy garden under the shade.

Tomato-based dishes or stews, like lamb kaldareta or cherry tomato spaghetti.
