• Hand- harvested
• 100% of Pinot Noir grapes go through a carbonic fermentation with stems
• 50% then goes through an open fermentation vat for 5 days 
• Fermentation is spontaneous for 3 days 
• Disgorgement is warm and manual, stored for 5 months
